NEED ENERGY FOR THE DAY? - MORNING LOAF RECIPE

I have a brilliant - and quick - recipe what I must share you.
Yummy, easy to make, high in fibre and gives you energy for the day.






It is not just my favourite but the whole family loves it - there is always a fight for the last bits...
I usually make a loaf or bake it in muffin cases (12 muffin cases needed) but I can imagine that they would look pretty in mini loaf cases too.

What makes it really attractive for me, that there is only natural sweetness form the fruits and some honey.
A nice slice with a pot of natural yoghurt is just a perfect start for the day. Also brilliant as a snack.

I can recommend this loaf even if you are on a weight loss diet, as one serving is only 180 kcal (1/12 of the loaf) and it can soothe your sweet tooth. :-)

Here is the recipe:

Morning loaf


Wet ingredients:
150 ml natural yoghurt
2 eggs
50 ml sunflower oil
100g apple cooked and pureed 
1 ripe banana, mashed (I usually just puree the apple and banana together) 
4 tbsp clear honey 
1 tsp vanilla extract 




Dry ingredients:
200g wholemeal flour 
1 tbs wheat bran (optional)
50g rolled oats 
1 and 1/2 tsp baking powder 
1 and 1/2 tsp bicarbonate of soda 
1 and 1/2 tsp cinnamon 
2 tbsp mixed seeds like pumpkin, linseed, sunflower seed 
100g dried apricots or mixed fruits (you can use frozen berry mix too)








1. First heat the oven: 180C – 160c fan – gas 4

2. Line a loaf tin with a 2 lb loaf tin liner.

3. Mix the eggs, yoghurt, oil, mashed apple and banana, honey and vanilla. 


4. In another bowl mix the flour, oats, baking powder, bicarbonate of soda, cinnamon. 



5. Pour the wet ingredients into the dry and mix briefly, add the dried fruits, then pour the batter into the prepared tin. Sprinkle with seeds if you want. 



6. Bake 25-30 mins until golden and well risen.

7. Cool on a wire rack. 



8. Can be stored in a sealed container for up to 3-4 days.

  1. hmmm....looks very yummy....but I doubt it would last 3-4 days...it would disappear within a day or so :) I really like the pictures, make me want to get up and start baking. M
